There are only two Seattle waterfront hotels with not much between your hotel room and Elliott Bay.
There are lots of other hotels in Seattle that offer great views of the water, mountains, and city that aren't directly on the waterfront. Some are just a couple of blocks away. But if what you are looking for is a room right on the water, these fit the bill.
Keep in mind that the waterfront is at sea level, of course, which means that just about everything else is uphill from there. So if you're staying one of these, be sure you bring comfy shoes. Of course, that also means that in the late afternoon or evening when you've been out walking all day and are headed back to your hotel, it's downhill!

The Edgewater

If you're looking for Seattle waterfront hotels with rooms where you can hear the water lapping against the building, the Edgewater is the one. Literally on the water at Pier 67, it is famous for the Beatles having fished from the window of their room in 1964. The water-side rooms are the best reason to come here as rooms on the other side overlook the city streets or the parking lot. The decor is Pacific Northwest lodge-style, with a more quaint feel than luxurious. Pets welcome.

Marriott Waterfront
2100 Alaskan Way
4 Star Class, $$$
Lots of cruise-ship travelers stay here right before and after their cruise. The courtyard features great views of Elliott Bay and the Olympic Mountains. There's a year-round pool that is half-indoor and half-outdoor. The outdoor half includes a sundeck with views of Elliott Bay. A paved walking and bicycling path in front of the hotel leads to Myrtle Edwards Park along the waterfront.
